Shrimp in Coconut Sauce

Ingredients:

  • 2 cups of peeled and cleaned shrimp
  • 1/4 cup of vegetable broth
  • 1/2 cup of coconut milk
  • 1/2 sweet chili, chopped
  • 2 cloves of garlic, chopped
  • 2 tablespoons of parsley, chopped
  • 1/4 cup of chives, chopped
  • Salt to taste
  • 2 tablespoons of butter
  • 2 tablespoons of flour
  • Pepper to taste

Preparation:

  1. Marinate the Shrimp:
    • In a bowl, marinate the shrimp with salt, pepper, and flour. Let it rest for about 10 minutes.
  2. Prepare the Ingredients:
    • Chop the garlic and sweet chili.
  3. Cook the Shrimp:
    • In a large pan, melt the butter over medium heat.
    • Add the marinated shrimp and chopped garlic to the pan. Stir well.
    • Cook on low heat for about 5 minutes, stirring occasionally.
  4. Add Coconut Milk:
    • After 5 minutes, pour in the coconut milk and continue to cook over low heat for about 10 minutes, stirring occasionally.
  5. Add Remaining Ingredients:
    • Add the chopped chili, chives, parsley, and vegetable broth to the pan.
    • Adjust the salt to taste.
  6. Final Cooking:
    • Let the mixture cook for another 5 minutes over low heat, allowing the flavors to meld together.
  7. Serve:
    • Serve the shrimp in coconut sauce hot, garnished with extra parsley if desired. This dish pairs well with rice or crusty bread.
