Chipotle Shrimp

Ingredients:

  • 500 g large shrimp
  • 1 lemon
  • 1/4 onion, sliced
  • 4 cloves garlic, chopped
  • 1/3 cup vegetable broth
  • 2 roasted tomatoes
  • 3 chipotle chilies
  • 1/2 cup tomato puree
  • 2 tablespoons finely chopped parsley
  • 1/4 teaspoon oregano
  • Salt and pepper to taste

Preparation:

Prepare the Shrimp:
  1. Peel and Season:
    • Peel the shrimp and season them with lemon juice, salt, and pepper. Reserve the shells.
Extract Flavor from Shells:
  1. Fry the Shells:
    • In a frying pan, heat some oil and fry the shrimp shells to extract their flavor.
    • Once the shells turn red, remove them from the pan.
Cook the Shrimp:
  1. Sauté Shrimp:
    • In the same pan, sauté the onion until it becomes translucent. Add the chopped garlic and shrimp.
    • Remove the pan from the heat momentarily to avoid accidents, then add the white wine. Return to the heat and let the wine evaporate.
Prepare the Sauce:
  1. Blend Ingredients:
    • In a blender, blend the roasted tomatoes, chipotle chilies, and tomato puree until smooth.
    • Pour the sauce into the pan with the shrimp and cook over medium heat.
Final Touches:
  1. Season and Cook:
    • Season with salt, pepper, oregano, and add the chopped parsley.
    • If necessary, add a splash of water to the sauce and let it cook for a few more minutes until it boils and thickens slightly.
Serve:

    • Serve the chipotle shrimp with a side of rice, cooked vegetables, or avocado.
